Shami Kabab 🍖 Recipe

First, you'll need some beef or mutton (500g) 🥩,


  chana dal (1/4 cup) 🌾

, and a couple of onions (1 large, sliced) 🧅

. You’ll also want green chilies (3-4, chopped) 🌶️

, ginger-garlic paste (1 tbsp) 🧄, and turmeric (1/2 tsp) 🌿

. For that extra kick, grab red chili powder (1 tsp) 🌶️,

  garam masala (1 tsp) 🧑‍🍳, and cumin seeds (1 tsp) 🌰

. Don't forget your whole cloves (4-5), green cardamom (2-3 pods), and bay leaves (2-3) 🍂. 

For flavor, you'll need salt 🧂, 

fresh coriander (1/2 cup, chopped) 🌿

, and finally, an egg 🥚 to bind it all together.

Step 1: Start by cooking the meat and dal. Throw the beef or mutton into a pot with the dal, onions, ginger-garlic paste, green chilies, and enough water to cover everything 🌊. Add the spices (turmeric, chili powder, cumin, cloves, cardamom, and bay leaves) 🌶️. Let it cook on medium heat until the meat is tender and the water reduces down. This usually takes about 40 minutes ⏱️.

Step 2: Once it's cooked, let it cool for a bit 😌. After that, remove the whole spices and grind everything into a smooth paste in a food processor or meat grinder 🔪. If it’s too thick, just add a little water 💧.

Step 3: Now, put the ground mixture in a large bowl and add garam masala, fresh coriander, and salt to taste. Crack an egg into the mix and stir well to combine everything 👩‍🍳.

Step 4: Grease your hands with a little oil 💧 and shape the mixture into small patties—round or oval, whatever you prefer! 🍔

Step 5: Heat some oil in a frying pan over medium heat 🥘. Fry the kababs for about 3-4 minutes per side, until they’re golden brown and crispy on the outside 🌟.

Step 6: Serve your delicious Shami Kababs with naan, paratha, or even a side of chutney or yogurt for that extra zing! 🍞🧴
