Chicken Karahi Recipe

CHICKEN KARAHI
To make Chicken Karahi, start by heating oil or ghee in a large karahi (wok) over medium-high heat. Once the oil is hot, add finely chopped onions and fry them until they turn golden brown. After that, add ginger-garlic paste and sauté it for a minute until it becomes fragrant.
Next, add chopped tomatoes along with red chili powder, turmeric powder, and coriander powder. Cook the tomatoes until they soften and the oil starts to separate from the spices. Then, add the chicken pieces and stir them well to coat in the spice mixture. Let the chicken cook for about 5-7 minutes, allowing it to brown slightly.
Once the chicken has browned, add sliced green chilies and salt to taste. Mix everything well, cover the karahi, and let the chicken cook on medium heat for about 20-25 minutes, or until it's fully cooked and tender. If needed, you can add a little water, but keep the gravy thick.
When the chicken is cooked, add garam masala powder and mix it well. Let the chicken simmer for another 5 minutes to absorb the flavors. Finally, garnish the dish with freshly chopped cilantro and julienned ginger.
Serve the Chicken Karahi hot with naan or rice for a delicious meal. Enjoy!
